Wild Venison Chili

Ingredients

  • 1 1/2 to 2 pounds ground wild venison

  • 1 32 ounce can classic tomato sauce

  • 2 Tablespoons olive oil

  • 2 onions, diced

  • 1 can rotel

  • 1 can black beans, drained

  • 2 chipotle chilis in adobo sauce, chopped

  • 1/4 cup chili powder

  • 4 garlic cloves, minced

  • 2 Tablespoons brown sugar

  • 1/4 Tablespoon cayenne pepper

  • 2 bay leaves

  • 2 tsp thyme

  • 2 Tablespoon cumin

Instructions

Heat oil in a large skillet or medium pot on medium heat. Add the onions and cook until tender, about 4 minutes. Add the minced garlic and cook for 30 seconds to 1 minute more, stiring continuously.​ Add wild venison and cook until brown.

 

Once meat is mostly brown, add tomato sauce, Rotel and adobe chilis and combine, cooking for 5 minutes. Combine. Drain black beans and add in the spices and sugar. Stir in bay leaves and simmer for 30 minutes. 

Serve with shredded cheddar cheese, sour cream or tortilla chips!
