Ingredients

1 1/2 to 2 pounds ground wild venison

1 32 ounce can classic tomato sauce

2 Tablespoons olive oil

2 onions, diced

1 can rotel
-
1 can black beans, drained

2 chipotle chilis in adobo sauce, chopped

1/4 cup chili powder

4 garlic cloves, minced

2 Tablespoons brown sugar

1/4 Tablespoon cayenne pepper

2 bay leaves
-
2 tsp thyme

2 Tablespoon cumin
Instructions
Heat oil in a large skillet or medium pot on medium heat. Add the onions and cook until tender, about 4 minutes. Add the minced garlic and cook for 30 seconds to 1 minute more, stiring continuously. Add wild venison and cook until brown.
Once meat is mostly brown, add tomato sauce, Rotel and adobe chilis and combine, cooking for 5 minutes. Combine. Drain black beans and add in the spices and sugar. Stir in bay leaves and simmer for 30 minutes.
Serve with shredded cheddar cheese, sour cream or tortilla chips!
