Pan Fried Dove Breasts

Ingredients

  • 14 wild dove breasts (from 7 wild doves)

  • 1 cup almond flour

  • 1 tablespoon paprika

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 3/4 cup wing sauce (of any flavor)

Instructions

First, prep the dove breasts by patting them dry with a paper towel, then season them with salt and pepper. Let them come to room temperature. 

 

Assemble your almond flour mixture by mixing the almond flour with paprika, and salt and pepper.

 

Heat a cast iron skillet to medium-high heat. Pour olive oil and place butter into pan. Once hot, place doves breasts in almond flour mixture and place in pan to sear for 2-3 minutes. Turn them over and cook for another 2-3 minutes. 

Once doves have been cooked and have reached an internal temperature of 165F, place them on a plate lined with paper towels to rest. 

After doves have cooled a bit, grab a quart/gallon sized zip-lock bag and pour wing sauce into the bag. Dump the cooked dove breasts in the bag and toss to coat breasts. 

Serve with your choice of side and dipping sauce!
