Spring Gobbler Pasta

  • 1 1/2 to 2 pounds wild turkey sausage links, sliced into 1.4 inch thick pieces (see recipe here)

  • 2 TB olive oil

  • 1 cup cherry tomatoes, sliced in half

  • 1 sweet onion, diced

  • 2 garlic cloves, minced

  • 1 lb rotini pasta noodles

  • 1/3 cup fresh, chopped basil

  • 1/2 cup shredded parmesan for serving

  • 2 TB red pepper flakes


Cook pasta according to package instructions (if using 1 lb rotini, bring 4 quarts of water to a rolling boil, add pasta and return to boil, stirring occasionally. Boil uncovered for 9-11 minutes or until desired tenderness). Add salt to taste.

While pasta is cooking, heat oil in a large skillet medium heat. Add the sliced wild turkey pieces and brown (about 6 minutes cook time if raw) and set to the side. Add the onions to the pan and cook until tender, about 4 minutes. Add the minced garlic and cook for 30 seconds to 1 minute more.​ 


Once pasta is done cooking, drain and add to the pan to combine with the onion, garlic, and sausage. Stir gently to combine and add fresh basil, tomatoes, parmesan and red pepper flakes. 


Stir once more to combine and serve with extra basil and tomatoes!
