
Wild Turkey & Kale Soup

Ingredients

1 pound ground wild turkey

8 slices of bacon, cooked and diced

1 large sweet onion, diced

6 russet potatoes, chopped into 1-inch cubes

3 garlic cloves, minced

6 cups of chicken stock

1 1/2 cups of heavy cream (half & half also works)

3-4 cups of kale, stemmed and chopped

1 1/4 teaspoons of red pepper flakes

Salt & pepper to taste
Instructions
Brown ground turkey and bacon in a pan and set to the side. In a large stock pot, sauté onion on medium heat until soft, about 4 minutes. Add garlic gloves and cook one more minute. Stir in the ground turkey meat and bacon,chicken stock, and potatoes. Bring to a boil and simmer for 25 minutes or until potatoes are tender.
Once potatoes are cooked, add heavy cream, kale and red pepper flakes. Give a good stir and cook 2 more minutes. Dinner is served!
